I know this can be simple for some, I'm not noticing any
major discomfort out of work, but when I'm at my
computer, I tend to use my drops more often just to
"clear" things up after an hour or so. My eyes don't feel
dry under normal circumstances and for the most part
they do not itch or burn.
I suppose my main question is: If you have dry eyes,
would you know, or can it be something you didn't realy
realize you had, but have? Also, can this condition
develop over time?

Dry eyes can develop over time. Computer vision syndrome is a form of dry eyes - where patients experience symptoms including blurring of vision when working on the computer.
Patients with dry eyes can benefit by pretreating their dry eyes before LASIK, PRK, LASEK or Epi-LASIK with lubricating drops and potentially even Restasis.
Best of luck
